What granularity do you prefer for commits altering these? e.g., one commit for all articles and trivial typos, and separate commits for each qualitative change of phrasing.

It's totally up to you (if I was to do that, it probably would be a single commit, but it depends, and again, it's up to you)
The README.md documents of projects on GitHub must function both as the root of project documentation when downloaded, and when viewed on the web; however, it is not some blog post, and if someone is already in the project's repository, it is probably distracting to redirect them to some link about overcomplicated interfaces from completely different fields.
