Update PlasmaPy metadata #333

This PR upgrades PlasmaPy's project maturity from "Partially met" to "Good". I also made some minor updates to PlasmaPy's metadata.

Awesome, thanks! I was going to wait until PlasmaPy's v1.0.0 release to do this, but we decided to sidestep that by going to date-based versioning instead. 📆
