chore: migrate to myst syntax #48

Closes #42

This change updates the existing articles to use MyST syntax. It also removes some unused dependencies and pins others to ensure compatibility with readthedocs. Most of the content has been left unchanged, but some additional directives have been added to improve the readability of the documentation.

I've checked through the resulting output and it looks fine to me, but it's worth double-checking to make sure I've not messed something up horribly!

@probonopd it looks like there's a permissions issue that's causing the CI to fail. I think the build failures themselves are fixed.

Thank you very much @Sporiff. Indeed a pull request does not have the permissions to deploy to the site. But when I merge, it should...
