Moving to exclusive Waterfall support as Waterfall is far enough along in development

The methalox variants now need to be changed to accommodate Waterfall- they don't remove the hydrolox plume. It is probably also possible to add waterfall plumes to those engines too.

I think with Nertea working on methalox engines, I think there's sufficient engines out that support Methalox out of the box, so I think I'll stop adding Methalox variants to the hydrolox engines for 2.0.
