Description

This PR drops some unused env variables, and adjusts the README for those that were missing.

NEXT_PUBLIC_TESTNET_MODE is no longer needed after https://github.com/hemilabs/ui-monorepo/issues/496
NEXT_PUBLIC_RAINBOW_APP_NAME and NEXT_PUBLIC_RAINBOW_PROJECT_ID were never actually in use
