How and when do you refrigerate #63

I'm in the middle of trying the steps. I started yesterday afternoon/evening by doing the "stretch and fold". I left the dough, in a bowl with cling film and towel over, in room temperature, on the counter. After the last stretch and fold I put it into the fridge and I'm going to assume it stays there till an hour before actually starting cooking them tonight.
