[task]: containerize a VM #3

For the demo we need a popular VM to test. Ideas include subnet-evm or tokenVM. Ideally we can also publish this vm to a container registry for ease of use like https://hub.docker.com/.

I think subnet-evm might be the most impressive from the demo POV
