Fixed app theme & calendar theme issues on android

Description

Fixes app theme not reflecting system theme & calendar component not reflecting the system theme when switching btw light & dark.

App theme issue: App did not reflect system them on start up (at least in the simulator). Added app config setting specifically for android. Calendar theme issue: This is a known issue with react-native-calendar library & I've implemented the solution as recommended.

Tested on Pixel 5 API 30 & IPhone 13 ios 15.2 simulators
