Update Copyright information in emails to reflect the current year #790

Current behavior The current email templates are using hard coded values for year e.g. this line

To Reproduce Steps to reproduce the behavior:

  1. Go to User Registration
  2. Enter user details
  3. Click signup
  4. Check confirmation email that is sent to user from step 2
  5. Copyright year has been hard coded to read 2021

Expected behavior Copyright information should include the current year
