Add missing working-directory and workspaces

Too fast! Not sure it will work: the 12-generate-project.sh script isn't iso with the one of generator.

JHI_SCRIPTS is from generator-jhipster repo or https://github.com/hipster-labs/jhipster-daily-builds/tree/main/test-integration/scripts, JHI_JDL_SCRIPTS is from daily builds.

That's the cost of breaking changes. 😆 I think those scripts should be removed for v8, but we are not at v8 cycle yet.
