add some copy enhancements and an openapi spec file

i also broke out the ordinal activity guide into 2, for scan and for streaming - seems cleaner

Now running into issue I ran into last time where for some unknown reason, my bitcoind node running with the bitcoin.conf as written in this guide causes a *** ThreadSync: Failed to read block 000000000000000000932d63a72190b4d4e6105007891d57b68405567296caa3 from disk error. This is unique to my node and machine, since we had you @ryanwaits go through the Chainhook guide with this bitcoin.conf and it worked.

Will continue on with a different bitcoin.conf for now, just to confirm the rest of the guide is valid.
