correct spelling in https://hl7.org.au/fhir/4.1.0-ballot/changes.html: 7.1 ...biological sex Observaton profile... add hyphen in https://hl7.org.au/fhir/4.1.0-ballot/guidance.html: 2.2 ..(after the well known CMM grades)... - change to well-known.

The change to changes.md will be overwritten by the wholesale change via https://jira.hl7australia.com/browse/FHIRIG-210.

@oridashi, this PR should be stripped of the changes.md when merging.
