Sex and Gender updates (FHIR-47160, FHIR-47158, FHIR-47157, FHIR-46431)

This PR provides fixes for the following issues:

• FHIR-47160 Additional guidance required for populating the RSG.value element for Sex Assigned at Birth
  • Noting that changes to Biological Sex value set are done via aehrc/fhirpit/pull/103 and not in scope of this PR
• FHIR-47158 Reword statement describing Recorded Sex or Gender (RSG) to avoid ambiguity
• FHIR-47157 Remove text describing pronouns as a preference in the Sex and Gender page
• FHIR-46431 AU Base Patient should clarify that Patient.gender is regarded as a Recorded Sex or Gender value
