NFR: Add an Asset-Selector Custom Config #261

As an editor I want a custom config for the asset selector sidekick addon to ensure that videos from AEM Assets get copied over to to a v2-embed named block.

Blocked as the deployment of this solution for VT is not clear. Pending input from Satya at Adobe and Alexis to move further with this.

A new PR has been created to address the issue that v2 was missing from the code for this configuration. https://github.com/hlxsites/vg-macktrucks-com/pull/831

This ticket is to be addressed in the same way.

This ticket is no longer needed as the v2-embed block is not ready for RC usage.
