think through the model of sanity schemas #40

Before diving head first into sanity integration, it would be wise to think hard about each schema we're going to be using in this project and store them somewhere canonically (should be fine to store in this issue thread)

    nothing currently, all data is served from API

    Latest Podcasts (from spotify?)
