New brew installs use /opt/homebrew/ by default, so we now use brew --prefix to determine where to install stuff.

Bonus content:

Added both stderr/stdout logging for php-fpm launch agents to $BREW_PREFIX/var/log/php@$PHPVERSION-fpm-*.log
Added PHP error logging to $BREW_PREFIX/var/log/php@$PHPVERSION-error.log
Removed spinner, which seemed a bit broken anyway
Removed some dead code
