Solved. You have to delete the integration and add it again. After the auth the sensors are coming back.

Don’t forget to create a backup before the operation. You possibly have to rename some sensors after the reinstall.

It goes down again after HA restart, so not really a solution.

I ended up deleting the "Netatmo" integration, resetting the Weather Station by holding the top touch button until it blinks red + release and press to confirm, then I set the Weather Station up in Apple Home. After all that, I added it as a Homekit Device in HA.

Too early to say if this is more stable, but it works for now. (And yes, not really a solution, as not everyone uses Apple Home)
