Ubuntu 20.04.1 LTS is not a supported system for a Supervised setup.
Please check our community forums, there might be people that have similar setups and problems.

Exactly the same problem. Debian 10 buster. They are visible, however greyed out. When I try to start them, I get the message above. Need to uninstall and reinstall. RPi2. Not supported, I know. Just wanted to say. Everything installed as per Kanga Who's guide, nothing else on the Pi. If that is any help.
Every time my server reboots, I have to go through and reinitialize every addon. It is supervisor that is removing them. Why?

Edit: I was able to fix the issue by pulling missing images manually:
docker image pull "homeassistant/amd64-addon-configurator:5.2.0" docker image pull "homeassistant/amd64-addon-check_config:3.6.0"
System was running with out any issues. Was on 0.118.5 and now on 2020.12.6. home assistant is in a docker along with node-red, glances, grafana, sambe, config, duckdns, influxdb and let's encrpyt.
After a reboot, the are all disabled. and all images in docker are gone. If I reinstall, then all previous configurations are gone.
After attempting to click start to get them running, the following error is displayed:
404 Client Error for http+docker://localhost/v1.41/containers/create?name=addon_core_configurator: Not Found ("No such image: homeassistant/amd64-addon-configurator:5.2.0")
