Disable MacOS builds #398

CI is failing for the Rune project due to a bug in one of our dependencies (https://github.com/hotg-ai/librunecoral/issues/43). As a hacky temporary workaround, this PR disables the MacOS builds so we can keep merging changes.

Note to self: when we revert this PR, make sure to re-enable the corresponding branch protection rule.
