How to rolback to a specific version of plex #16

Hello,

Due to an issue transcoding from PMS version 1.32.2.7002 (https://forums.plex.tv/t/1-32-2-7002/840714), I would like to be able to temporarily switch to version 1.32.1.6999 while waiting for the upcoming PMS 1.32.4 release.

how to add this in docker-compose?
