Currently the /datasets/sankey_data endpoint and its neo4j query rely on the deprecated field data_types, replace this with the new dataset_type field (after it becomes required field via #589).

In the meanwhile, also update the Sankey Data rendering in the Software Docs to use this new dataset_type. Zhou will coordinate with the PR merge into main since it requires the above entity-api updates to be released. We'll verify the rendering at https://software.docs.hubmapconsortium.org/data-sankey/
