Update Segmentation Masks directory schema

@j-uranic - we should connect on this, I think we're going to have to move some of this around since we've shifted how we're going to be dealing w/ seg-masks.

@jpuerto-psc Sure thing, I know they've been a moving target. I have good availability tomorrow and Friday. If this week doesn't work, any time not marked on my calendar usually works.
