Update `sc_atac_seq_prep_process_analyze.cwl` to provide expected outputs

It's producing archr_umap_coords_clusters.csv instead of umap_coords_clusters.csv, which is what scatac-csv-to-arrow.cwl expects.

If there's a good reason for the output here to remain the same, the downstream pipeline could change.
