updates to data and data transformation pipeline #33

There are currently 26 commits in this PR. We recommend a "squash + merge" option if possible, to reduce the size, since we had several false starts on updating the data that are all present in the history. Once this is merged, then I think we'd be ready to accept the repo transfer back to hubverse-org, so it can live there more long-term.

These data, as present in this repo, were pushed into the hubverse AWS cloud. Although we have removed the config and github action that would push again to the cloud.
