reconsider example data #18

We have discussed this some elsewhere, but I am filing an issue to keep track of the discussion.

Two points for consideration:

  1. It would be nice for the categorical forecasts to "match up with" the quantile forecasts
  2. Rather than putting the whole simple-example-forecast-hub into the hubEnsembles package, maybe we should process it into a data object that is part of the package. This would then impact stuff that's done in the vignette around here: https://github.com/Infectious-Disease-Modeling-Hubs/hubEnsembles/blob/dc068ae719698922160498bbeefe61fa0d4fbe27/manuscript/hubEnsembles_manuscript.Rmd#L368-L372
