These days there are some prepaid providers that offer eSIMs. Very limited device support, I'm personally searching for a mifi type device that supports eSIM, but there are a few phones around. For example https://silent.link works in a variety of regions I believe. Also, the iPhone specifically can store multiple eSIMs and switch between them at will. Easier than tracking physical SIMs, although some downsides as if the phone is offline, then the eSIMs are unavailable.
