Docker image tags should be user-friendlier #1681

Right now, docker images referenced in the docs are just tagged with their git commit sha. Instead, they should have a more user-friendly tag, as simple as hyperlane-agent:2023-01-30 or if we want to a semantic versioning scheme. Anything is better than what we have right now.
