Update to Sawtooth 1.1 #29

Change repo
Use 1.1 instead of 1.0 Docker images

Fix based on similar fix to upgrade Sawtooth Cookiejar to use Sawtooth 1.1: https://github.com/danintel/sawtooth-cookiejar/commit/9f0b69

I don't know if it makes sense to update the example to 1.1 when the course modules are specific to 1.0. For example, there is no mentioning of the Sawtooth devmode engine as a separate service in the course modules. If we're updating the example, I think there should also be an update to the content.

Maybe we should at least tag a 1-0 release of the course?

The basic problem is education-sawtooth-simple-supply no longer works, due to changes in the protobuf library in repo.sawtooth.me sometime in the past year.

I doubt it will ever work as development has moved on to 1.1 then to 1.2.

I’m ok with tagging 1-0. But it doesn’t work, even with 1.0.

Closing this PR in favor of PR #32 Update to Sawtooth 1.2. This is because it also fixes the problem of the corrupt protobuf packages in the internal sawtooth.me repository for Sawtooth 1.0 and 1.1 (Xenial). See PR #30, which I am also closing.
