Update the sawtooth-default.yaml #23

Update the sawtooth default docker-compose version to 2.0 since it does fails with 2.1

Check to make sure that you have Docker version 17.03.1-ce or greater, and Docker Compose version 1.9.0 or greater. These versions are required for the version 2.1 to work successfully.
