Remove angle brackets from mermaid to see if that fixes generation #23

Removing the angle brackets after finding this issue in Mermaid 8.8.0: https://github.com/fralau/mkdocs-mermaid2-plugin/issues/34 to see if that fixes our current generation problem. The only way to test is to merge.
