feat!(sdk): renaming the sdk and its components

BREAKING CHANGE: There was a renaming of components

To see the renaming info, use this commit https://github.com/input-output-hk/atala-prism-wallet-sdk-swift/commit/f5f488af1e71a6c528fe7503062b03ae6abbb3c4 to review the renaming, otherwise it shows all files with no differences with previous versions.

This PR also makes all commits DCO compliant.

This PR closed, but this branch replaced main since it had to rebase the past commits for DCO.
