docs: adding new demo for TS -> node

Description:

Adding a new demo, transpiling TS into node, giving us a simple CLI. Not feature complete, currently handles Agent start, mediation, OOB connection, Credential issuance.

This demo is heavily focused on SDK integration, with minimal app frameworking. Using to demonstrate functionality use, and generate feedback / conversations for improvements.
