Tidy up and setup documentation build. The documentation structure is heavily inspired by lumispy! ;)

I did notice the remnants of the inspiration in the review ;-)

We have to mention "off-axis" to distinguish from inline electron holography, which to my understanding is so far not covered (but the package could of course eventually be further developed to include that.
