I tried a stock DietPi build after coming across the recommendation in the README files. This is on a Pi 4 with 4 GB ram, and Adafruit bonnet, and a 64x32 display running on 5V 4A power.
Unfortunately, I was having problems and was convinced I had a bad board, so I posted to the Adafruit forums: https://forums.adafruit.com/viewtopic.php?p=1002607#p1002607. I was surprised that their suggested fix (use Bullseye) worked (FWIW, Bookworm also works but not Ubuntu).
You can see the issues I was having on the forum post, but essentially blues were invisible, and green was visible but only when there was no red present.
