Remapping Panel orientations

Hi! I'm a little confused on where to proceed from here.

Initially I had my panels in this configuration:

and thus far everything works perfectly. However I'm trying to reorient it like this:

I tried looking at the available config options but I dont see anything that matches right away. Currently each panel is 64 wide 32 high.

How can I adjust it so that its one cohesive display across the three panels?
