PDFs support javascript and iText has the ability to add this functionality.
Here's a request for this feature that i'm making by Patrick Wright's request.
Here is his comment:
my guess is we should be providing a simple factory interface by which you can
control how (and when) actions are created in the target PDF, similar to what we
do for forms. Can you file an issue/enhancement request for this? You'll
understand better than I (I don't do much with PDF, Pete does) what sorts of
information you'd need passed to the factory method for it to do its work.
