Get things ready to migrate to Gatsby v3.

upgraded gatsby- prefixed components
migrated to gatsby-image-plugin

outstanding:

figure out solution for aspectRatio on dynamic images, because setting it in the resolver does not work for my current use case. info - https://github.com/gatsbyjs/gatsby/discussions/27950?sort=new#discussioncomment-127073
- art direction setting width and height is not ideal, aspect ratio is passed a prop from contentful to a reusable gallery element
