Add ecosystem notebook

• Add a new notebook on memtables/output formats/etc.... This notebook will go 2nd, so bumped the numbers of everything after.
• Slim down the previous notebook 2 to remove duplicated content and improve flow (@gforsyth and I talked about this earlier). I'll want to do another pass on this notebook later in a followup PR.
