Ok, all the notebooks are now qmd files -- I've deleted the ipynb files but they can be generated using quarto convert *.qmd

All of the qmd files can be previewed using quarto preview file.qmd -- I commented out a few things to make this work for now, we can revisit and improve how this works.

Going to merge this to give us all a shared starting point to work off of.
