Is there a difference between 'any-uri' and 'uri'? I modeled this as 'uri-type' which translates to URI as defined by appropriate RFCs.

no, any-url is just an alias for the CDDL "native" uri type (see https://tools.ietf.org/html/rfc8610#appendix-D).
