While the test for building the docs was successful, please note that the build process triggered a few warnings and errors. However, if we can resolve them, we could indeed update our sphinx version to the latest one; most of the docs look like usual already.

Upon closer inspection, the warnings in the build process linked above are identical to the ones in the latest main docs build process. This makes me wonder whether our docs are correctly built at all -- and I will open another issue to clarify/track this. In the meantime, we can merge this PR because the docs seem to build equally well with this latest version of sphinx :)
