What's required to build a safari plugin? My build environment is Linux (Ubuntu), and I don't have access to Macs
However, Firefox and Chrome are both available for Mac - doesn't IITC work in these?
IITC may work with Chrome and Firefox on Mac. Some don't want to switch from Safari to another browser. All you need is a Mac, Safari 5+ and the Free Developer Account for Safari Plugins (other Dev-Acc cost money).
A windows user might prefer IE too.
Actually, wouldn't GreaseKit/NinjaKit do the job?

no response, but there seems to be multiple options for running IITC on mac, so I won't be adding a safari plugin.
I'd like to raise this issue again. Ninjakit hasn't seen an update in 2 years and isn't the most usable experience, it was also made for Safari 5 and we're now on 8 as of Yosemite.
Greasekit is from 2008 and doesn't include a lot of the GreaseMonkey API.
In short there isn't really an easy to use way of getting IITC in Safari right now.
I'd add that most mac users, use safari as it's battery safe. Unlike chrome or firefox, using only safari, your notebook battery usage will stay low. Just play a youtube video on chrome on a macbook.
Said that, it's not that there are or aren't options for running IITC on a mac. The issue is accessibility. If the user is not willing to do the process (too complicated, doesn't understand it, etc), the option might as well not exist.

Another option is http://satxresist.com/IITCmw/
After it generates the code, save that to a bookmark and click the bookmark as the Intel Map page is loading. I don't have a Mac (so can't try it), but theoretically, it should work just fine.
@umer936 awesome solution! it works.
Is anyone interested? I found out, that i can't get the IITC userscript to work under OS X. So i wrapped it into a Safari-Plugin. Seems to work. It needs a place to stay, so here in the Github or on the main site.
