The vertical buoyancy flux term is easier, but the APE fluxes are more complicated because we need terms like $\frac{dz^{\star}}{db}$.
We can calculate this from one flattened arrays of $z^{\star}$ and $b$, for example: https://github.com/hdrake/HorizontalConvection/blob/7cd01cc07b8162223c8d27443816cb2f5b8ff8b7/notebooks/background_potential_energy.ipynb
