Example request

GET https://bazaar.sewer.fail/api/v1/item/STOCK_OF_STONKS?start_date=2022-08-01T22:40:45&end_date=2022-08-02T22:40:45

Add:

start_date: String representation of a date time object that represents the start date & time of the returned data.
end_date: String representation of a date time object that represents the start date & time of the returned data.

I agree, you should try to add this
