Update ElasticSearch Service for AWS #170

Amazon announced that their new service offering for ElasticSearch will be their engine support for OpenSearch and replaces it with the latter

Hi @kaplanan, recently I moved the project to Jekyll-based implementation from the previous simple HTML page, which is creating conflict. However, I will manually merge the changes for now.
