Rename ij-launcher to imagej-launcher #2

This rename is for consistency with the rest of the SciJava software stack.

@dscho It still builds, but... I wouldn't be surprised if this hoses up something or other. Hence, this PR for your review!

I just had a look, and only some minor parts of Fiji (not user-visible in general) will have minor issues if we fail to adjust fiji.git while bumping to a new pom-scijava after releasing a new launcher. So I think we're safe because we're going to release the new launcher pretty soon, right? ;-)
