Add gatsby v5 and graphql 16

Description

Updates dependencies for gatsby v5, which includes:

• Graphql 16
• Gatsby v5 and plugin updates where available
• React 18
• Node 18 (required for v5)

The code changes were actually minimal, but obviously the dependency increases are big, so probably a major version change.

I've just taken a quick look, but I'll need more time to smoke-test these deps changes. I'll circle back around in a few days time.

All looks good on my end. I'm going to change the target branch to next for some smoke testing. Once that RC looks good, we can get these changes merged into main.
