feat: update immich and pgvecto.rs image versions #111

This updates the included image version to the current latest, which introduced no breaking changes since the last version that was used in this chart.

It also updates the DB image, as immich now supports v0.3.0

The vecto.rs version will be updated in tandem with the main docker-compose.yml.
