[BUG] NODE_ENV Error after Update

The bug

After i updated to the latest version for immich the immich_server throws an error while startup. I get an Error 500 on the Proxy address "500 getaddrinfo ENOTFOUND immich-server" so i check the logs for the immich_server:

Reproduction steps

1. Edit the .ENV and Compose file for the latest changes
2. Pull the new Images
3. Spin up the Containers with Compose-File
...

You should use the docker-compose.yml from the latest release, not from the main branch.

@onedr0p I think this is because of #2157. The relevant validation code is here.

Should not be an issue in newer images that have it set in the Dockerfile.
