Replace CARTO maps by screenshots #82

We cancelled our subscription to CARTO, so posts with CARTO embedded maps no longer function:

This PR replaces all embedded maps with screenshots + adds a disclaimer to posts. It also corrects some summary to description in the frontmatter.
